Brussels Sprouts Salad

Ingredients

Salad Ingredients

1 bag Brussels Sprouts
1/2 cup Toasted pine nuts
1/4 lb Bacon, crispy
1/2 cup parmesan cheese, shredded

Dressing Ingredients

1 egg, raw
1 tbsp brown mustard
1 tbsp red or white wine vinegar
1/4 tsp salt
1 cup olive oil
1/2 tsp anchovy paste
1/2 tbsp lemon juice
1 tbsp mustard
1/2 tsp italian seasoning blend

Brussels Sprouts Salad Directions

  1. For the salad:
    • In the food processor, shred the Brussels sprouts with the slicing blade.
    • add crispy bacon, toasted pine nuts, and parmesan.
  2. For the dressing
    • Put the egg, mustard, vinegar, salt, and olive oil in a narrow container suitable for use with a hand blender. (Don't break the egg yolk)
    • Insert stick blender, not running, to the bottom of the container.
    • Turn on the stick blender and while running, lift slowly for about 15 seconds.
    • Now you have Mayonaise.
    • Mix in anchovy paste, lemon juice, Italian seasoning, and salt & pepper to taste.
