| 1 bag Brussels Sprouts |
| 1/2 cup Toasted pine nuts |
| 1/4 lb Bacon, crispy |
| 1/2 cup parmesan cheese, shredded |
Dressing Ingredients
| 1 egg, raw |
| 1 tbsp brown mustard |
| 1 tbsp red or white wine vinegar |
| 1/4 tsp salt |
| 1 cup olive oil |
| 1/2 tsp anchovy paste |
| 1/2 tbsp lemon juice |
| 1 tbsp mustard |
| 1/2 tsp italian seasoning blend |
Brussels Sprouts Salad Directions
- For the salad:
- In the food processor, shred the Brussels sprouts with the slicing blade.
- add crispy bacon, toasted pine nuts, and parmesan.
- For the dressing
- Put the egg, mustard, vinegar, salt, and olive oil in a narrow container suitable for use with a hand blender. (Don't break the egg yolk)
- Insert stick blender, not running, to the bottom of the container.
- Turn on the stick blender and while running, lift slowly for about 15 seconds.
- Now you have Mayonaise.
- Mix in anchovy paste, lemon juice, Italian seasoning, and salt & pepper to taste.
