Ingredients:
2 skinless, boneless chicken breasts, sliced
2 carrots, sliced thin2 unpeeled zucchini, sliced
1 cup sliced fresh mushrooms
2 medium tomatoes, cut into wedges
1 8-oz package linguini
4 tablespoons unsalted butter
3/4 cup grated Parmesan cheese
1 egg, slightly beaten
8 oz Monterey Jack Cheese, grated
