Cobber - Summer Fruit Cobbler

Modified from Bradley Ogden's Breakfast Lunch and Dinner.

Ingredients

  • 4, cups ,mixed fruit (peaches, blueberries, blackberries, raspberries, nectarines, etc)
  • 2, tbsp ,flour
  • 1/4, cup ,sugar
  • , cup ,flour
  • 1/4, tsp ,salt
  • 1 1/2, tsp ,baking powder
  • 1, tbsp ,sugar
  • 2, tbsp ,cold unsalted butter
  • 1/2, cup ,cream
  • , ,extra sugar for sprinkling

Directions

  1. Preheat oven to 400 degrees. Prepare fruit filling: Mix fruit with sugar and flour in a medium bowl, set aside. Prepare the dough: Sift flour, salt, baking powder, and 1 tbsp sugar into a medium bowl. Cut butter into flour mixture until it resembles a course meal. Stir in cream, mix until just blended. Assemble: Pour half of the fruit into an 8x8 pan. Dot fruit with 1/3 of dough mixture. Spread remaining fruit on top. Dot the top of the fruit with the remaining dough. Sprinkle lightly with sugar. Balke about 30 minutes until golden brown.
