Quick, easy, versatile pesto.  Use on anything!

1/2 cup pine nuts
2 tbsp fresh lemon juice
1 clove garlic
1/4 tsp sea salt
freshly ground black pepper
2 cups packed basil leaves (and/or spinach)
1/4 cup extra virgin olive oil
1/4 cup freshly grated Parmesan cheese

Pesto Directions

  1. Toast the pine nuts.  (Or walnuts, or pistachios, etc)
  2. In food processor, combine toasted nuts, lemon juice, garlic, salt, pepper and pulse until chopped and blended.
  3. Add the basil (or spinach, or a combination) and pulse until combined.
  4. Add the olive oil into the running food processor.  
  5. If using parmesan, add and pulse a few times to combine.
