1/2 cup pine nuts |
2 tbsp fresh lemon juice |
1 clove garlic |
1/4 tsp sea salt |
freshly ground black pepper |
2 cups packed basil leaves (and/or spinach) |
1/4 cup extra virgin olive oil |
1/4 cup freshly grated Parmesan cheese |
Pesto Directions
- Toast the pine nuts. (Or walnuts, or pistachios, etc)
- In food processor, combine toasted nuts, lemon juice, garlic, salt, pepper and pulse until chopped and blended.
- Add the basil (or spinach, or a combination) and pulse until combined.
- Add the olive oil into the running food processor.
- If using parmesan, add and pulse a few times to combine.
